CHEESE Potato Croquettes Recipe:
Ingredients:
- 2 large potatoes (about 500g)
- 1/4 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp salt
- Chopped parsley
- 2 tbsp cornstarch
- 1 egg
- 3/4 cup breadcrumbs (about 100g)
- 2 tbsp Parmesan cheese
- 50 GRAM OF MOZZARELLA CHEESE
- Dried parsley (optional)
Instructions:
- Boil the Potatoes:
- Peel the potatoes and cut them into chunks.
- Place the potato chunks in a pot of salted water and bring to a boil.
- Cook until the potatoes are tender, about 15-20 minutes.
- Prepare the Potato Mixture:
- Once the potatoes are cooked, drain them and transfer them to a mixing bowl.
- Mash the potatoes until smooth.
- Season the Potato Mixture:
- Add black pepper, paprika, salt, chopped parsley, and cornstarch to the mashed potatoes.
- Mix everything together until well combined.
- Form the Croquettes:
- Take a small portion of the potato mixture and shape it into a cylinder or oval shape, about the size of your index finger.
- Repeat until all the mixture is used up.
- Coat the Croquettes:
- Beat the egg in a shallow bowl.
- In another shallow bowl, mix breadcrumbs, Parmesan cheese, and dried parsley (if using).
- Dip each potato croquette into the beaten egg, then coat it with the breadcrumb mixture, ensuring it's evenly coated.
- Fry the Croquettes:
- Heat oil in a frying pan over medium heat.
- Carefully place the coated croquettes into the hot oil, ensuring not to overcrowd the pan.
- Fry until golden brown and crispy on all sides, about 2-3 minutes per side.
- Once done, transfer the croquettes to a plate lined with paper towels to drain any excess oil.
- Serve:
- Serve the potato croquettes hot as a delicious appetizer or side dish.
