Chicken Parmesan
Chicken Parmesan, also known as Chicken Parmigiana, is a delicious Italian-American dish that features breaded and fried chicken topped with tomato sauce and melted cheese. Here's a classic recipe to make Chicken Parmesan:
Ingredients:
4 boneless, skinless chicken breasts
Salt and pepper
1 cup all-purpose flour
2 large eggs
1 cup breadcrumbs (you can use Italian breadcrumbs for extra flavor)
1/2 cup grated Parmesan cheese
2 cups marinara sauce (homemade or store-bought)
1 cup shredded mozzarella cheese
Olive oil, for frying
Fresh basil leaves, for garnish (optional)
Instructions:
Preheat your oven to 375°F (190°C).
Place each chicken breast between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to pound the chicken to an even thickness, about 1/2 inch thick. This ensures the chicken cooks evenly and tenderizes it.
Season the chicken breasts with salt and pepper on both sides.
Set up three shallow bowls. In the first bowl, place the flour. In the second bowl, beat the eggs. In the third bowl, mix together the breadcrumbs and grated Parmesan cheese.
Dredge each chicken breast in the flour, shaking off any excess. Then dip it into the beaten eggs, allowing any excess to drip off. Finally, coat the chicken in the breadcrumb mixture, pressing gently to adhere.
Heat about 1/4 inch of olive oil in a large skillet over medium-high heat. Once the oil is hot, add the breaded chicken breasts in a single layer (you may need to do this in batches depending on the size of your skillet). Cook for 3-4 minutes per side, or until golden brown and cooked through. Transfer the cooked chicken to a paper towel-lined plate to drain excess oil.
Spread a thin layer of marinara sauce on the bottom of a baking dish. Place the cooked chicken breasts in the dish, slightly overlapping if necessary. Spoon the remaining marinara sauce over the chicken, covering each piece evenly.
Sprinkle shredded mozzarella cheese over the top of each chicken breast.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let the Chicken Parmesan rest for a few minutes before serving. Garnish with fresh basil leaves, if desired.
