Chicken Caesar Salad

Chicken Caesar salad is a classic and satisfying dish that combines crisp romaine lettuce, tender grilled chicken, crunchy croutons, and creamy Caesar dressing. Here's how to make it:

Ingredients:

For the Salad:

2 boneless, skinless chicken breasts
Salt and pepper, to taste
1 tablespoon olive oil
1 large head of romaine lettuce, washed and chopped
1 cup croutons (store-bought or homemade)
1/2 cup grated Parmesan cheese

For the Caesar Dressing:

1/2 cup mayonnaise
2 tablespoons grated Parmesan cheese
1 tablespoon Dijon mustard
2 cloves garlic, minced
2 anchovy fillets (optional), minced or 1 teaspoon anchovy paste
2 tablespoons fresh lemon juice
1 teaspoon Worcestershire sauce
Salt and pepper, to taste

Instructions:

Season the chicken breasts with salt and pepper on both sides. Heat the olive oil in a skillet or grill pan over medium-high heat. Cook the chicken breasts for 6-8 minutes per side, or until they are cooked through and no longer pink in the center. Remove from heat and let them rest for a few minutes before slicing.

While the chicken is cooking, prepare the Caesar dressing. In a small bowl, whisk together the mayonnaise, grated Parmesan cheese, Dijon mustard, minced garlic, anchovy fillets or anchovy paste (if using), lemon juice, and Worcestershire sauce until well combined. Season with salt and pepper to taste. If the dressing is too thick, you can thin it out with a little water or milk.

In a large salad bowl, combine the chopped romaine lettuce, croutons, and grated Parmesan cheese.

Slice the cooked chicken breasts into thin strips or bite-sized pieces.

Add the sliced chicken to the salad bowl.

Pour the Caesar dressing over the salad and toss everything together until the lettuce is evenly coated with the dressing.

Divide the chicken Caesar salad among serving plates.

Optional: Garnish with additional grated Parmesan cheese and freshly ground black pepper.

Serve immediately and enjoy your delicious chicken Caesar salad!

You can also add other ingredients to your salad, such as cherry tomatoes, bacon bits, or sliced hard-boiled eggs, to make it even more flavorful and filling.
