Buffalo Chicken Wings

Buffalo chicken wings are a classic and flavorful appetizer, perfect for game days or gatherings. Here's a simple recipe to make buffalo chicken wings at home:

Ingredients:

For the wings:

2 lbs (about 900g) chicken wings, split into flats and drumettes
Salt and pepper, to taste
1/2 cup all-purpose flour
Vegetable oil, for frying

For the buffalo sauce:

1/2 cup hot sauce (such as Frank's RedHot)
1/4 cup unsalted butter, melted
1 tablespoon white vinegar
1/2 teaspoon Worcestershire sauce
1/4 teaspoon garlic powder
1/4 teaspoon cayenne pepper (optional, for extra heat)

Instructions:

Preheat your oven to 250°F (120°C). This will be used to keep the cooked wings warm while you finish frying the remaining batches.

Season the chicken wings with salt and pepper to taste.

Place the flour in a shallow dish. Dredge each chicken wing in the flour, shaking off any excess.

In a large skillet or deep fryer, heat enough vegetable oil to submerge the chicken wings to 375°F (190°C). Fry the chicken wings in batches for about 10-12 minutes, or until they are golden brown and crispy. Remove the wings from the oil and place them on a wire rack set over a baking sheet to drain any excess oil.

While the wings are frying, prepare the buffalo sauce. In a small saucepan, combine the hot sauce, melted butter, white vinegar, Worcestershire sauce, garlic powder, and cayenne pepper (if using). Heat the sauce over low heat, stirring occasionally, until it is heated through and well combined.

Once all the wings are fried, transfer them to a large mixing bowl. Pour the buffalo sauce over the wings and toss them until they are evenly coated in the sauce.

Transfer the sauced wings to a baking sheet lined with parchment paper or aluminum foil.

Place the baking sheet in the preheated oven to keep the wings warm while you finish coating the remaining wings in sauce.

Serve the buffalo chicken wings hot, with celery sticks and ranch or blue cheese dressing on the side for dipping.

Enjoy your homemade buffalo chicken wings! They're sure to be a hit at any party or gathering. Adjust the amount of hot sauce and cayenne pepper according to your preferred level of spiciness.
